Eat Clean without sacrificing your palate

When you hear eating a plant-based diet, you imagine a salad and a very boring one. Well, let me tell you that lettuce and spinach are not the only leafy greens. Nature is noble and splendid, as well as our fantastic human body, very intelligent machinery, which surprises me every day. 11 years ago when I decided to go Vegan, eliminating meat, fish, and dairy products from my diet, I understood very little about the subject, however, I felt that I was in the right direction, but my ignorance in it made me eat more than necessary, so I gained some extra weight, LOL. I thought I should eat more so as not to lose the "nutrition" that animal products and their derivatives gave me. That's what I was told my whole life. The famous food pyramid! and all these things about calcium: That the only way to get calcium and strong bones are from cow's milk; that our teeth are made to eat animals; that the only way to ingest vitamin B12 is through red meat, etc. It took me a couple of years and books to reprogram myself to understand that this pyramid was upside down and these theories about animal products were made hundred years ago. After reading several, articles and studies about plant-based diets, it makes sense to me to try. The "difficult" part of eating like this is the mincing and preparation. Some people do not love the idea of being in the kitchen chopping onions and peppers, but like everything in life, you have to do your part and give yourself that opportunity if you want to eat rich, nutritious, and healthy meals. You will get used to it and it will be part of your daily life because it's all about creating habits right?
I am a professional dancer, and health is been part of my career. Food is my other passion and being in the kitchen is therapy to me, knowing that what I put in my body is the medicine that comes straight from the soil, makes me feel like a superhero.
But the best part is in THE SAZON, the flavor, to make all those beautiful vegetables taste good, mix those shapes and colors and feel satisfied. Just as you prepare your ground meat, you can season your chickpeas or your mushrooms. You can make some pancakes without using wheat flour or eggs that are fluffy, repower your favorite cereal with fresh fruits and seeds. Give the avocado the honor it deserves. It's fun, trust me.
